Every October to December is the best time to enjoy newly harvested white truffle. This year 1957 & Co. CEO Mr. Paul Kwok along with Paper Moon Hong Kong Italian Executive Chef Mr. Giuliano Dacasto visited the northern Italian comune of Savigno in search for fresh and seasonal white truffle to bring back to the tables of Paper Moon Hong Kong for our esteemed guests. Located near Bologna, Savigno experiences a wet summer and cold winter.

Paired with a moderate rain season throughout the year it makes Savigno another important provider of white truffles alongside Alba. The largest white truffle in the Guinness World Records, weighing a massive 1483 grams, was in fact found in Savignon back in 2014. Even in suitable environments white truffles are very difficult to grow – only if the fungi associate with the small roots of a 10-year-old or above oak tree under very specific climate requirements can this precious delicacy be formed.

The comparatively unattractive appearance of white truffle is unable to hide its charismatic and unique aromas within. Executive Chef Giuliano Dacasto created a series of white truffle delicacies this fall to fully demonstrate the charm of this diamond-like ingredient. Every dish on this menu will include three grams of white truffles, shaved on top right before being served to preserve the best aromatic condition.
