Located within Cubus, a modern glass building cleverly constructed on a relative small footprint and raised vertically into whole-floor dining and retail destinations, Bella Vita is reached via glass elevator to Level 11. A fitting location, as patrons are whisked from busy street surrounds, to enter an environment that the Bella Vita founders describe as “a cozy ambience modeled after the idyllic essence of Tuscan countryside”. A transformation indeed, exchanging a busy work sphere for a calming and somewhat intimate dining room environment, enriched by empathetic personnel who are quick to greet their experience-seeking clientele.

Eye-catching aesthetics, warm ambient lighting, elegant table décor with candlelight, large window panes reflecting an urban location – all contributing factors to an experiential environment. Thanks to social media, Chef Francesco Pasquini’s latest epicurean inspiration and concept behind a new seasonal summer menu was quickly passed around, making the ‘Summer Tasting Menu’ an obvious choice. Seated at generously sized dining tables with ample space all-round, eyes wondering across the dining room discovering extensive displays of wine, produce, oils and fanciful decanters tastefully placed in floor-to-ceiling timber shelves. Surrounded by a wall of shelves – a glass window, revealing live images of culinary experts busy crafting contemporary dishes for their anticipating audience.

Prior to each course being served, the knowledgeable dining room crew introduces complementary wines and the composition of each creation, amplifying ingredients and their origins whilst offering a clear sense of which ingredient is of key and subordinate importance. As Chef Francesco explains, “For each dish, the roles of various ingredients are juxtaposed in harmony. Our veal tenderloin is sourced from Netherlands for the additional juiciness and tenderness of the meat. We bring in grouper from Australia and New Zealand for their meaty texture. Red shrimps are flown in specifically from Spain to make sashimi-based appetizer. We also bring in quality asparagus and artichokes for the Summer offerings.”

Mindfully immersed in each course and engaged in table conversations around familiar and newly discovered flavors, the taste, the aesthetic arrangement of each culinary display, and the atmosphere form a noticeable part of the overall Bella Vita dining experience. Modern Italian cuisine discovered anew: an appreciation for skillfully designed creations made of authentic ingredients; prepared and presented by a team of experienced and passionate staff.
