At The Landmark Mandarin Oriental, Hong Kong from 17-23 October will see a one-of-a-kind pop-up by 3 Michelin-star sushi master Kenji Gyoten. Showcasing the young restaurateur and master chef extraordinaire’s meticulous hontegaeshi (hand flip) technique of Edomae nigari. Using rice sourced from a region in Kyushu renowned for its extreme temperature differences between night and day.
The unique world-class event will feature a replica of chef Gyoten’s bijou Fukuoka restaurant with omakase for lunch (including 5 appetisers, 11 sushi, and dessert of seasonal Japanese fruit). For dinner (7 appetisers, 12 sushi, and dessert of seasonal Japanese fruit) which change daily featuring the finest) seasonal ingredients. From 24-26 October, London’s famed Clove Club, the winner of The Highest New Entry of World’s 50 Best Restaurants, follows with a unique supper club pop-up. Where Scottish chef Isaac McHale will conjure up a series of unconventional tasting menus. Featuring flavoursome concoctions like his signature raw sea bream plum stone vinegar & horseradish; chestnut and oyster broth with wild Scottish seaweeds & Petrossian Caviar; and dry-aged Challans duck served in three ways. “One of the best meals I had in 2015 was at the Clove Club and it was that exceptional experience that made me determined to bring his food to Hong Kong,” says Richard Ekkebus, Culinary Director of The Landmark Mandarin Oriental, Hong Kong. Priced at HKD3,688 per person, the gourmet event commences with a Champagne cocktail reception with four snacks. After followed by an eight-course menu that includes pairing with six wines or non-alcoholic beverages.
